Last weekend Rob rustled up a real breakfast treat for me after a hectic week.
I say
brunch, but we actually found ourselves scoffing his handy work at 7.30am (lunatics). Come lunch time we were hanging out in
Byron Burger- but that's another story...
I'm afraid I can't really tell you how to make it, as I lay in bed like a true princess until the plates were hot on the table.
My guess is, bung a bag of spinach, cherry tomatoes, mushrooms, maybe a dash of olive oil into a oven dish and plop the eggs (carefully) on to the bed of veg. Oven cook for 15 mins.
He served it up with chunky organic bacon and fresh coffee off the hob.
Perhaps one for the weekend?
